The professional gas fired pizza oven is very popular throughout the restaurant industry because it is cheaper to purchase and much easier to operate than the pizza oven which runs on wood.

You simply ignite the flame, then keep the temperature under control. An important point is the elimination of the need to purchase and store wood.

Also, very simple and advantageous is its significantly simple and quick cleaning, since there are no combustion residues and the oven only needs to be cleaned from the light crumbs of the pizza residues.

The temperature performance of a gas powered pizza oven is comparable to that of the wood fired oven, as it can reach a temperature of up to 400°C. On the one hand, with the gas pizza oven’s automatic temperature adjustment, the flame can be fed much more conveniently, but on the other hand, many dishes lose the delicate aroma of wood and the fascination of dealing with the open flame.

However, a professional gas fired pizza oven does not prevent you from baking delicious pizzas, breads, side dishes, etc. in a way that is certainly more comfortable, just like in a wood-fired oven.

Also practical is the MRN Complete Gas System from Marana Forni. This is a cooking system that communicates with the easy-to-use oven console and can automatically maintain the desired temperature at five flame levels. This intelligent system lowers the flame but never extinguishes it, so the pizza is always prepared with a burning flame. The flame is wood-like, long and bright, reminiscent of the flair of a wood-burning oven.

There is also the Turbo Gas system developed by Marana Forni, a burner under the hob that optimizes heating, reduces costs and keeps the brick always warm.

The heat coming from this burner is then evenly distributed. Marana Forni gas fired pizza ovens have a special refractory stone bottom, which makes cooking very similar to the wood oven. The refractory material of this stone floor is 3,200 kg/m3, compared to 1,800/2,400 of a normal material, with a mechanical strength and wear resistance three times higher than that of porphyry. This high density and refractory rock provides high performance in heat storage, heat transfer, and heat recovery, and guarantees a long service life.

Marana professional gas fired pizza ovens are equipped with primary and secondary air control, which gives the flame a heating effect typical of wood fires.

Three models of the gas powered pizza ovens rotate, another two models are fixed ones. You can choose between six designs, the Napoli Colors Domes, for example, comes in many different colors and provide different reflections depending on the lighting conditions in your own restaurant. For years this model has been the absolute star at the various pizza championships where Marana Forni is the official technical supplier. The Colors domes fit through any access only 70 cm wide and are then installed on site colored.
