Following the Italian tradition of pizza baking, only hardwoods are used for firing the Marana wood ovens. Specifically, these would be mainly beech, oak or olive, the best would be even a combination of the woods.

Another important reason for using awood fired pizza oven is, of course, the lower consumption compared to other types of firing. Once the right temperature is reached in the oven, the extremely efficient Marana Forni brick retains the heat due to its high density, which is 3200 kg/m³, compared to 1800/2400 of a normal refractory material. Three of Marana Forni's five commercial pizza ovens are equipped with a rotating baking plate, which is used to prepare pizzas without having to constantly rotate or watch them. Such a baking plate can be moved on three levels, which in turn leads to enormous fuel savings. The hotplate is heated up in a few seconds by moving it to the top, where the temperature is the highest. When the baking process is finished, the oven signals itself. Of course, the refractory baking stone is also available fixed and not rotating.

The Marana Forni wood fired pizza ovens are equipped with Alare, that is an extremely heat-resistant grate made of AISI 321 refractory steel, on which the wood is inserted through the opening on the side of the pizza mouth, so that the wood does not have to be passed over the hob and maximum cleanliness on the hob is guaranteed.

Another special feature of the refractory brick is the micro-perforated bottom, which allows the pizza to be baked slightly raised in order to enjoy many benefits. This micro-perforation retains heat, allows moisture to escape better from the pizza, and settles the flour well. The baking results are unique, since the moisture released leads to fragrant pizzas that do not burn or stick.
