A perfect pizza is the result of the unique baking surface of the gas-powered pizza ovens from Italy. The micro-perforated baking plate consists of micro-wells that bake the pizza slightly elevated, allowing it to release its moisture during the baking process and bake fragrantly without burning or sticking. In addition, the total surface area is greater than that of a smooth surface, so that the heat can be released more quickly, being more exposed to flame radiation.

A Made in Italy pizza oven with gas firing always bakes at the ideal temperature, thanks to the SU&GIU® rotating mode of the baking plate, which can rise towards the dome to find the ideal temperature. This system guarantees lower gas consumption. If there is a slowdown in operation, it is not necessary to maintain the constant high temperature, which may cause overheating of the baking surface.

Under these circumstances, SU&GIU® allows to lower the temperature. If afterwards a higher temperature is needed again, the baking surface is lifted up to the dome, where the temperature can reach 600 degrees Celsius. In this way, the baking surface heats up in the shortest possible time and is ready to bake in a flash.
